Tasting Profile

Lemon curd, guava, apple, and pear are layered with citrus blossom and subtle brioche. Dry and mouthwatering, with saline lift, bright acidity, mineral tension, and a long citrus finish.

Winemaking

Fruit was harvested by hand at night on September 17, 2024, then whole-cluster pressed, cold settled, and barrel fermented in French oak barrels and puncheons. The wine completed Malolactic fermentation and was aged in French oak for 18 months, including 15% new oak, with extended lees aging and weekly stirring to build texture and depth.
